Hidemitsu Furukawa is a Distinguished Research Professor at Yamagata University, Japan, and CTO of F-EAT Inc. His research focuses on soft matter engineering, 3D/4D printing, food printing, and space gastronomy. He leads projects on COOLD FOOD, long-term frozen food preservation, and next-generation dining systems for Earth and space, bridging science, technology, gastronomy, and society.
