Traditionally, technology has been applied to new food product development, both from a product and a process point of view, contributing to the journey of food from the farm to the table. However, innovation goes far beyond developing new products, it involves identifying consumer needs and commercialising a solution they are willing to pay for. In this session, Codorniú and Angulas Aguinaga will explain how technology can also be used for consumer investigation, as they are doing in the disruptive “CONOCE” project.
