The definition of Food Integrity includes a broad spectrum of food characteristics such as quality, safety or authenticity. Its assessment and assurance require the collaboration of all agents in the food supply chain. In this session researchers and the food industry will overview cutting-edge technologies, methods and tools to assess the integrity of food and as a consequence, respond to the consumers` demand of information about the food they eat.
