Efficiency and sustainability in meat industry and impact on the final quality of meat products

There are many factors to be taken into account that can determine the final quality of the product. Monitoring relevant parameters such as environmental conditions on the farm and its impact on the quality of the animals should point out critical environmental factors to be taken into account to assure an efficient and sutainable meat industry. Advanced and non-destructive technologies will allow to make decisions based on the information collected and ensure an optimal evolution of the processes along the meat chain. These approaches as well as some examples of the application of new technologies and process innovation to improve sustainability in the meat sector will be considered in the session.
